The first fermentation yields a young and fruity wine, typical of valpolicella. After several months, a second fermentation is carried out in a vat containing the pressed skins and pomace from our best Amarones. Lastly, San Michele is aged for 18 months in large oak barrels. This gives the wine a rich color, full body and beauitful bouqet of cherries and plums.
